Fillets of large lemon soles; our filleters cut these from larger Icelandic or Faroese caught whole fat fish, these are snowy white and delicate when cooked and we do not recommend skinning these before sending as these are a delicate seafood and this would damage the fish however, these can be salted and cooked at home and the skin will simply peel off once cooked.
