Frozen scallops are cheaper than fresh for a couple of reasons. Scallops can only be harvested in relatively good weather especially in the summer. The market price can drop somewhat so the fishermen sell them to factories that freeze them and sell them when they are scarce. Frozen scallops absorb water during this process which drips away when defrosting. Frozen scallops are usually heavily glazed to 'protect' them from burning over a long period in the cold store. Defrosted scallop meat can lose up to 40% of its frozen weight! Buy the large king or the cheaper but smaller queen scallops. Fresh is best with scallops hence the big price difference.
