Also known as redfish or Norway haddock; this is a relatively common fish in the North Atlantic but rarely ends up in the U.K. Prized by the rest of Europe and Japan. Flavoursome and tender cooked 'on the bone'. The skin has very large scales and is often used by the Jewish fraternity as Gefilte fish. Available here in 3 sizes, the big ones make a premium. Watch out for the spines on the back of the dorsal fin which are like needles!
