Our roe on scallop meat is harvested in Scotland. These are from the larger species known as King scallops. If you take scallop meat freshly extracted from the shell and leave it in water it gradually absorbs the water and consequently increases in weight, we buy only 'dry' scallops which although very wet are 'unsoaked'. We received these more or less daily and are usually ex stock. The roeless scallops are 'refreshed' wild frozen at sea from the Pacific Ocean.
