The conger eel isn't an eel at all it's a fish but looks like an eel. When it's fresh it's slimy like all fresh fish should be. It has fine bones radiating from the spine which are fiddly but it's worth peeling the meat away after cooking. Prized by the Japanese for sushi or grill as in the image. Frozen steaks offered here.
