Well actually defrosted skate wings. These skate wings are caught by Norwegian long liners fishing around Rockall, they are frozen on board within minutes of being removed from the hook. We par-defrost them remove the leathery skin and send them overnight to you. These are absolute top quality but must be kept chilled close to freezing at all times or they start to decay quickly. The size of these specimens can vary from 1 to 2 kilos so we will adjust your invoice and payment to match your delivered weight.
This is the king of fish available here in fillet or tranche for you to cut yourself. These are wild fish landed on Grimsby fish market caught around the shores of Iceland, Faeroes or Norway. We buy the large sizes which could be anywhere from 20 to 100kilos (16 stone)! Dont confuse these with the farmed variety or pacific halibut which are much smaller and do not have the same taste or texture. The fillet is a chunk of boneless meat with the skin on. We charge per kilo and will adjust you payment to match the weight you receive - order in multiples of 1 kilo.
Fresh Hake from British waters caught by British vessels. Hake landed by UK vessels often ends up on the continent as our European compatriots appreciate its delicate flavour and texture. You can have here as steaks which is traditional or as skin on fillets.
Haddock fillets skin on, the traditional fillet as eaten in fish and chip shops up and down the country. These fillets are around 1lb (500 grms) in weight. Choose from pin bone in, pin bone out or skinless - boneless.
This time of year we get plenty of pollack from the South Coast of England. Pollack is very similar to cod and half the price!. Just choose how you want it from the drop down menu.
The redfish is not so popular in the U.K. Don't know why as it is full of flavour. Often called Norway haddock and sometimes erroneously snapper. It has nasty spines (which we remove) running down the back which our filleters fear as they can give you a venomous cut. Comes highly recommended. You can buy skin on or skinless fillets, just select from the drop down menu. Supplies are pretty regular but occasionally we may have to supply frozen.
Not surprisingly the Torbay Sole is found around the south coast of England. It's not as prised as its close relative the Dover Sole but its a quarter of the price and just as nice. It's available here as skin on fillets or remove the skin and roll and stuff as in the image.
The Megrim is another underestimated flatfish to be found in U.K. waters, much of what our fishermen land goes to Spain. You can have it here as large skin on fillets...
These large fillets of plaice are cut from daily landed whole plaice from the North Sea. Delicately flavoured and fine texture make this one of the nation's favourite fish.
We hand fillet our salmon from 5-6 kilo whole gutted fresh farmed salmon this gives a fillet of around 2 kilos, this size of fillet makes the ideal cut portion size for cooking. We sell our fillets skin on and boneless i.e. pin bones removed, you will be unlucky to find a bone. With the belly flap removed it's ready for slicing into your desired portion size and being fresh you can freeze what you need for another time. Each fillet has a different weight naturally and we will charge you the weight delivered.
These are farmed sea bass like most bass found on British menus, we can and do get wild bass landed locally so look out for it on our special offers section, always more expensive but some say well worth it. These fish come around the 1lb to 1.5lb size range and do remember to remove the gut prior to cooking.
Such an underestimated fish mackerel. This is the whole fish as it comes out of the sea. Removing the head and gut is the easiest way to prepare this fish. If you wish to fillet it then take one cut with a sharp knife from the back of the pectoral fin down and along the spine finishing at the tail. Trim the belly bones and if you're really fussy tweeze out the pin bones that run from the neck to the middle of the fillet. Here we offer 1 kilo about 2-3 fish.
Our fresh whole salmon are farmed in Scotland, they are gutted and ready for the oven. The size range on our whole salmon is between 2-3 kilos (4-6lbs) each and priced at £7.50 per kilo we will charge you for the size we deliver. If you would like a bigger, or smaller, fish then just send a mail and we will sort it.
Our Seabass fillets are farmed in Greece or Turkey. They are far cheaper than the wild fish, easily available and consistent in quality. If you specifically require wild then just email us from the site and we will revert with a quotation.
This is the centre cut from the yellow fin tuna, skinless and 100% pure meat. It arrives by airfreight from various countries in the Indian Ocean. We only buy the Sashimi grade quality, the best there is. Loins are normally around 2-3 kilos. We will try to get you a 1 kilo piece, if that's all you require, but we will charge the weight shipped.
These rainbow trout are farmed locally in Lincolnshire. Already gutted they can be thrown on the BBQ or baked whole. Each fish is around a pound in weight so at least 2 fish is a minimum order.
Not as prized as tuna but nevertheless a fine loin for steaking and at the price an economical alternative. Great for the summer barbeque.
